About the Author

Marti Buckley is an American journalist and cook from Alabama who has lived in San Sebastián for seven years. Her blog is travelcookeat.com, where she writes about food and Basque Country. Buckley also contributes on food and travel to countless media outlets, including Afar, National Geographic Traveler, and the Telegraph. She appears biweekly on the EITB Basque radio program Gastrosfera, talking about food and lifestyle trends. Buckley trained in the kitchen of the Southern chef Frank Stitt for two years, working her way up from garde-manger to pasta chef de partie. She coauthored the 2016 Wallpaper* City Guide Bilbao/San Sebastián. We live 3/4 of the year in New Orleans and 1/4 of the year in the Basque Country. We cook pretty adventurously just about every night of the year. This cookbook is, without a doubt, the most consistently reliable Basque cookbook published in English. The recipes are spot on and the dishes authentic. The directions are clear and the layout/photography commendable. Her longer text accurately situates each dish to the specific town or province from which it originates and provides a lot of backstory. This would be a worthy cookbook to read even if you didn’t cook from it. Meanwhile, it is an outstanding cookbook in terms of usability (and it’s rare for a cookbook to do both). Her pastry section is particularly on point (which is an extra compliment because we don’t lean toward sweets), but I hesitate to even say that because all of the sections are so exceptionally well done.

I admit, I was reluctant to buy this book but it was featured one month in a cookbook club. I had gift card money so I figured I''d take a look. When it arrived, I went through it page by page. The photos are stunning and the background on the region is so interesting that I thought if it ended up being a coffee table book, I''d be ok with that. After paging through it a few times, I earmarked some recipes that I wanted to try and started sourcing ingredients. As I cooked my way through - from the Basque tomato sauce to pintxos to stews to the yogurt cake - I didn''t find a recipe I didn''t like. The Riojan stew and the garlic soup are outstanding and are make agains, as is the yogurt cake that I''ve made several times! The recipes are well written and easy to follow and there are so many more I want to try. Don''t be put off by the ingredients; immerse yourself in the region and the culture and cook, cook, cook. You won''t be disappointed; it''s a wonderful book!

I''ve known about Basque cuisine for a while (as in, mostly that it exists and there are a few things that are unique to it), but nothing as in depth as Marti Buckley''s cookbook. Most people get lost in novels, but I have such a hard time keeping my attention to a page these days, that it appears the only thing that can get me to hunker down for long periods of uninterrupted time is a cookbook. Basque Country goes well beyond just giving you a recipe - oh no, you''ll learn the history of where it came from, how it became popularized, and all sorts of personal variation.

I love the current trend of Salt, Fat, Acid, Heat style cookbooks, that are more about teaching you the technique and less about a rigid recipe. Marti gives so much information that it gives you this amazing confidence to simply cook as they cook and rid all anxiety of total inauthenticity of you don''t happen to find or cook exactly as it says.

Marti has certainly found a fan, and I''m looking forward to her next one!

We are Basqueophiles, so love the people, the culture and the food. Although written by an American living in Donostia - San Sebastian, she clearly has immersed herself in her surroundings. We visit regularly and she really captures the flavors (both literally and figuratively) of Euskadi (Basque Country.)

We have already tried a dozen recipes and all were fairly easy to make and turned out pretty darn good and pretty darn close to what we eat while in Euskadi. It should be noted that if you can find the actual Basque ingredients, you will get much more authentic dishes. The same pepper variety grown in the Euskadi will taste quite different than one grown in Mexico or California. Try to the find the real thing and it will pay great dividends in your end product.

The book is well laid out, has photos of just about every dish, and has enough extras about the history of the Basque people and their food that we often find ourselves reading through it just like a regular book, even when we are not cooking.

The author has spent considerable time living in the area, and immersing herself in the soul of the Basque people. The recipes are well chosen, and fairly simple to prepare. She also gives sources for uncommon ingredients in the US. Although I have yet to travel to the region, I have eaten many memorable meals at Basque restaurants in Madrid, Mexico City, and Reno NV. After reading glowing review on here and seeing it recommended as one of the best coookbooks of 2018, I was so excited for it to arrive. After initially browsing, I am disappointed. It is a beautiful book, with history of Basque Country and authentic recipes but ... it is not a very accessible cookbook for the home cook in my opinion. I live in a small town that does have great markets and can typically source ingredients fairly easily, but I could barely find a recipe where I think I can get these ingredients. I hoped the author would offer suggestions for substitutions, but No. I tried to return this book, but the cost of return shipping makes it easier to keep. I hope to find inspiration here at some point, but not what I was hoping it would be.
